Reduce your product cooling time.

Science proves that fruit and vegetable cells, even after harvest, remain active and alive. A study posted by Elsevier Connect [1], highlights some important points found in a study on what happens to fruit and vegetables after they are picked. Lead researcher Dr. Janet Braam, Professor of Biochemistry and Cell biology at Rice University in Houston Texas and her team have found that produce respond to their environment for days and can continue to perceive light; as a result, their biological clocks keep on ticking. Using this knowledge, we can apply this to when a mass of fruit and /or vegetables is loaded into bins or crates after picking. Storing the produce this way may see the produce continue to generate its own heat source and discharge energy (heat) while still alive, creating additional heat deep within the storage container. All produce will expel energy at different rates, some quicker than others. Removing the heat at the core of the product as soon as possible after harvest will ensure slower ripening time, because the heat will be expelled before storing. The cells within the fruit/vegetable will be cooled at optimum cell life, resulting in a slower ripening of the product over time.

 

Traditional Methods.

The constant challenge faced by many producers harvesting in the warmer months is keeping the quality of the product to a premium when picked and stored. Traditional cooling methods can be time consuming and expensive, ultimately compromising operation efficiency and produce quality.

Cooling produce rapidly to optimal temperature is key to maintaining its quality and value. A well-known general rule of thumb in the fresh produce industry is; every hour gained in the cooling process will generally extend the shelf life of the product by 24 hours.

 

The RECS Method.

RECS is a fully automated multi-stage tunnel cooler that can rapidly cool produce to a desired temperature as quickly as 15 minutes. This rapid cooling process has been tried and tested to reduce the heat energy expelled from fresh produce by decreasing the internal temperature of the product; slowing down the ripening process and ensuring an extended shelf life. 

RECS achieves these results by allowing control of variables such as product temperature range, airflow, conveyor speed, input and output parameters and much more. These, and many more factors play a critical role in rapidly cooling the product without compromising the molecular structure.
